Alpine, Wyoming

A couple weekends ago Cj and I took a little road trip to Alpine, Wyoming! The Ziegler's had gone down there for part of there road trip and we decided to meet up with them while they were down there. Cj had never been to Wyoming, so I was really excited to have him go b/c I knew he would love it! We were lucky to enough to have stayed in the honeymoon suite at Steve and Diana's. They just had recently sold it, but the new owner let us stay for a couple of days.

We got to Steve and Diana's Friday around 6:30pm and everyone had already eaten dinner, and the guys were ready for a night fishing trip. Cj sat down to eat dinner and Steve said "You better eat fast." Cj downed his food and all the guys were off. I was able to stay back with Karinne and the kids, help clean up after dinner. After that we went to the honeymoon suite, where we stayed with the Ziegler's and put the boys to sleep. After that we went down to the spa in the honeymoon suite and sat in the Jacuzzi talking waiting for the guys to come home. It was SO relaxing.

The next day we decided to do a little bit of everything! First we went off to the Snake River to watch all the people come down the river. We even saw some people surfing in the river. Here are some pictures of us at the Snake River.

  

It was so pretty, and perfect weather! Andrew was with us, but I didn't get any pictures with him.. :( 

After the river we went horse back riding. This was Cj's first time to horse back ride and I wasn't sure how he would do. Luckily he had the best teacher Steve to teach him the ropes of riding a horse. He got on the horse and he did really well. He said that was his favorite part of our Wyoming trip. 

After horse back riding, we went canoeing. I don't know if its a good or bad thing that we didn't get any pictures.. Canoeing was very interesting. This was Cj and I's first time to canoe. Even kept saying that this determined how well our relationship was, you have to communicate with the other person for it to work. Everyone had their eyes on us to see how we would do. First we tried to have Cj in the back, steering the canoe. We flipped down the river, he says he wasn't his fault. I lost my paddle, I got my hair wet and I wasn't expecting the water to be as cold as it was. After our little flip we decided to have me steer the boat in the back. That didn't work either. It was really confusing to figure out which way to tell Cj to paddle when he was in front. If you wanted to go left, he needed to steer right. We literally did 10 360's in the river b/c we couldn't figure it out. I was trying to steer the back of the boat, yelling at Cj which way to steer. We started running into a huge tree branch so I just gave up and Cj took the hit on the branches and I didn't know what to do so I just laid my body back, and just laid there. Cj was yelling at me b/c he didn't know which way to go and I just started cracking up that I almost peed my pants! 
We survived, but it sure was an adventure.

After a long day of doing pretty much everything! Diana was sweet and stayed home making dinner. Cj and Andrew were obviously very ready for dinner.

Wyoming was so much fun! We loved hanging out, doing new things and just relaxing. Thank you Ziegler's for letting us come crash your party for a couple of days, it was a lot of fun!!


Next trip is this Thursday New York City!!! I cannot wait!!

Ziegler's road trip

The Ziegler's are road tripping this summer and came to stop by Provo, Utah! We enjoyed having them come and stay for a couple days. I am in love with Andrew and Caleb. If you met these two boys, you would be too. Andrew is such a good two year old (most of the time ;) ) and Caleb is the happiest baby you will ever meet! We were able to do some fun stuff while they were here visiting.

 Here's Karinne and Caleb at Provo tubes. The boys love water and swimming. Andrew even went down the big slides, with Mike of course. He loved the slides! When we were getting ready to leave he kept pointing at the slides and signing more, and started crying. :(

Told you, happiest baby! He is always smiling. He might of cried twice when he was hungry.

Caleb and I decided to take a Sunday nap together.

Caleb is one baby Cj will actually hold, without me asking him. This pictures cracks me up! Cj was flexing his muscles but it looks like he's about ready to sock Caleb right in the face. Also, Jesus just chilling in the back. Haha

I love when babies sleep, they always look so peaceful. 

Karinne and Mike actually went to the tubes twice while they were here. I had to work so they came to visit me at lunch and we had a little picnic outside. It was fun even Cj and Corbin were able to join us. After lunch they went back to the tubes. Karinne has on camera Andrew going down the slide and going around a sharp corner and his head smacking up against the slide. He woke up from his nap not very happy.

Karinne and Mike also love Bombay house. One night Karinne put the boys to sleep and Karinne, Mike, Cj and I snuck off to Bombay house for some dinner. We had a few fun days with them. We're holding on to their boat for a little while they continue on their road trip.So they'll be back in a couple weeks.

Chef Standefer's herb class

A couple weeks ago my dad taught an herb class. He's taught this class for several years now once a year, and this was my first year to help and see the class. It was a lot of fun. I was able to spend the day with him and help him grocery shop for all the supplies he needed to cook with and to have enough food for the people who came to the class have a little taste. He teaches the class at the McCoard's garden center. This is the same place that Cj and I got married. I hadn't been there since we got married so being there brought back a lot of memories of our wedding day.

Anyways, after helping my dad all day we took him to a nice dinner for father's day to Bombay house, our absolute favorite Indian food!

We had to get up early Saturday morning to help my dad prep some herbs for his class that morning.

My dad loves to cook, and he loves to teach people about cooking. Getting this all set up and everything was a lot of work. But I was glad we were able to help my dad out this year. I took a couple of pictures before the food was served, only b/c once the food was made we had to keep filling the cups full of food. So it kept us busy and I wasn't able to take any pictures.

Everyone seemed to love the class this year. We had about 40 more people show up more than last year. I'm so proud of my dad!

Here are just a couple of recipes I really enjoyed from the herb class!

Pesto Sauce:

2 cloves garlic

2 Cups basil leaves, packed

Coarse salt

1/4 tablespoon spine nuts

3 tablespoons Parmesan cheese

1/2 to 1/3 cup olive olive

Directions:

In a food processor, mix garlic, basil, a pinch of salt, pine nuts and cheese into a paste. Gradually blend in olive oil; adjust seasoning.

This is great to serve on top of french bread or with any type of pasta.

Feta and Herb Dip with Hummus:

1- 15ounce can chick peas or garbanzo beans, rinsed

2/3 Cup nonfat plain yogurt

1/2 Cup crumbled feta cheese

1 tablespoon lemon juice

1 teaspoon garlic salt

1 teaspoon freshly ground pepper

1/4 cup chopped fresh parsley

1/4 cup cup chopped fresh dill

1/3 cup chopped fresh mint

1/4 cup chopped fresh chives

Directions:

Place beans, yogurt, feta, lemon juice, garlic salt and pepper in a food processor and puree until smooth. Add herbs; puree until incorporated. Chill until ready to serve,

cinnamon rolls

Today is my second day off and I am officially bored. Being off for a whole week is a long time! Dr. Matt and his family are in Lego land, so we are off for a week. Yesterday was OK b/c Cj was off work and we went on a bike ride. But today he worked and I just got really bored. I made crock pot lemon chicken for dinner. I also made some homemade cinnamon rolls. I went to a bread making class with Melissa not too long ago, and learned a really easy bread recipe. With that simple bread recipe they have several meals you can make with the dough. I wanted to try the cinnamon rolls, with a cream cheese frosting. Not gonna lie they didn't turn out too bad. Even though Cj said they could use some raisins.

Olive has been wanting some herself. She keeps sitting on the couch staring at Cj and I.

We tried to hike to the 'Y' today. We took Sunny, and that was a big mistake. She already didn't want to go, but we still made her go. She literally whined the whole time we 'tried' to hike. She had several excuses as to why she couldn't hike. Lot's of excuses and Cj was being pretty patient with her trying to go at her pace. She finally just sat at a bench and wouldn't get up, so we decided to head back down to the car. She even started crying at one point. I guess she really didn't want to go. But I was SUPER bummed. I've never hiked the 'Y' and I was totally looking forward to it. My cousins are coming down from Cali on Friday, so we're hoping they'll want to hike up there with us.

Bridal Veil Falls

Today we drove up to Bridal Veil. Tim, Haley's husband (that's still weird to say!) had never been up there. So we decided to take him there while they were down visiting.
